My Quick and Easy Falafel Recipe
Ingredients :
1 cup (measure) of dried Chickpeas (that come in boxes not in can)
2-3 small cloves garlic
1/2 onion chopped
Aromatic herbs as follow (as much as you like) :
Parsley (I don’t add too much of it because I don’t really like the taste of it but you are free to add an extra portion)
Fresh Coriander
Mint (Optional)
Chive (Optional)
Spices (as much as you like) :
Cumin (Put at least 2 tablespoon. As far as I am concerned, I put a loooot of it because i love the smell of it)
Espelette pepper (optional but don’t but too much, if you don’t like it spicy)
Paprika (optional)
Salt & Pepper
Steps :
Let chickpeas soak in cold water overnight to rehydrate them : they will double size.
Rinse it well and let them dry (there shouldn’t have too much water when you will put it in food processor).
Pour all the aromatic herbs, garlic, onion and spices and pulse all ingredients (but not too much! Like in the picture below)
Form round balls or slider-shaped patties like in picture.
You can make them smaller or larger depending on your personal preference.
If the balls won’t hold together, place the mixture back in the food processor with a little bit of water for a more humid texture.
For a more crispy texture, try to pulse stale bread to create breadcrumbs and roll the falafel in 1 beaten egg and then on breadcrumb coating.
Heat olive oil and coconut oil (because it’s healthy :p but you can use your usual oil) in medium heat.

Be careful, it browns quickly so you should regularly turn them.
